Our hotel harkens back to the Tomitaya Inn, where the writer Koizumi Yakumo [born Lafcadio Hearn] stayed while in Matsue.

The theme of our cuisine is “a blending of food and drink,” and we offer dishes using seasonal, quality ingredients mainly from Izumo such as crab, rosy seabass, and Japanese seaperch.

Shimane Japanese beef is the highest quality Japanese beef, and it has received a number of prestigious awards

It has twice won the Prime Minister’s Award, the highest award, at the Japanese Beef Olympics held every five years. Flavor, fat, and texture are balanced well, and the meat is less bland and it has a more pronounced umami flavor than ordinary meat, so the flavor lasts longer in your mouth. One bite of this meat will fill your mouth with the softness and the sweetness of the fat, which is what accounts for the quality of Japanese beef.

The king of crabs “Matsuba crab”

Matsuba crab is called the king of crabs because of its springy and sweet meat.
The Sanin area provides a suitable environment for crabs to grow in, so each crab is plump and full. This is why you can enjoy the sweet crab meat as sashimi as well as boiled or grilled.

Rosy seabass, a premium-quality fish grown in the beautiful seas of Japan

Rosy seabass from Shimane Prefecture are especially famed nationwide for their deep flavor and mild, rich fat. About 40% of the rosy seabass caught in Japan are from Shimane Prefecture, and the area has strong ties to rosy seabass. People say that once you have a truly large rosy seabass, you’ll never be able to eat the usual “big” rosy seabass again.

Japanese seaperch grown in this unique environment are a specialty of Matsue, the City of Water

A Japanese seaperch specialty is “hosho-yaki,” which is Japanese seaperch wrapped in wet hosho [Japanese paper] and roasted. Fishermen used to roast Japanese seaperch in the ashes of a bonfire. Matsudaira Harusato, the 7th lord of the Matsue Domain, requested the dish, but the fish looked unsavory while still covered in ashes, so a cook wrapped the fish in hosho, roasted it, and served it to him. This is said to be the origin of roasted Japanese seaperch. The extra fat is soaked up by the hosho, so you can enjoy the true flavor of Japanese seaperch.
